Oyster Dressing
1/4 cup lard, butter or roast drippings1 cup chopped celery
1 cup finely diced onion
5 cups bread crumbs
1 teaspoon salt
2 teaspoons poultry seasoning
*Dash of cayenne
1 cup boiling water
2 cups oysters
Melt lard, butter or drippings in a large skillet; add celery and onion, and cook until clear. Add bread crumbs, salt, poultry seasoning, cayenne, boiling water and oysters. Cover and let steam 5 minutes. Pour into a large baking dish. Bake at 350 degrees for 25 to 30 minutes or until golden brown. Cover with foil halfway through if top is getting too brown.
