Southwestern Beef Casserole With Sweet Potato Waffle Fries Topping
1 pound ground sirloin
1 can (15 ounces) black beans, drained and rinsed
1 can (14.5 ounces) chopped fire-roasted tomatoes
1 cup frozen corn, thawed
1 can (10 ounces) 98-percent fat-free cream of chicken soup
2 cups frozen sweet potato waffle fries
Heat oven to 375°F. Coat 9-inch square baking dish with nonstick cooking spray; set aside.
In large skillet, cook meat until cooked through and browned; drain any excess liquid. Add beans, tomatoes and corn, mixing well. Transfer to prepared dish.
Spread soup evenly over meat mixture and top with waffle fries. Bake for 30 to 35 minutes, or until fries are crisp and casserole is bubbly.
