Chipotle Chile Mac and Cheese
1 box (14 ounces) deluxe macaroni and sharp cheddar cheese sauce dinner
1 pound lean ground beef
1 onion, chopped fine
1 red bell pepper, chopped fine
1 canned chipotle pepper in adobo sauce, minced
4 green onions, sliced thin
3/4 cup shredded cheddar cheese
6 butter-flavored crackers, coarsely crushed (about 1/4 cup)
Heat oven to 400 degrees.
Prepare macaroni dinner as directed on package. Meanwhile, brown ground beef with onion and bell pepper in large skillet over medium-high heat until no longer pink, 7 to 10 minutes. Drain off excess fat.
Add beef mixture to macaroni dinner with chipotle pepper. Spoon mixture into a greased 2-quart casserole or baking dish. Top with green onions, cheese and crackers. Bake for 15 minutes, or until cheese is melted, crackers are golden, and casserole is heated through. Yields 6 servings.
