Muffins made with healthful blueberries are a great start to any morning.

Kansas Wheat Berry Muffins
2 eggs
1/2 cup butter, melted
1 cup sugar
1/2 teaspoon almond extract
1 cup whole wheat flour
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups blueberries
1/4 cup sunflower seeds
In mixing bowl, beat together eggs, butter, sugar and almond extract. In separate bowl, combine flours, baking powder and salt; stir into egg mixture just until moistened. Gently fold in blueberries and sunflower seeds.
Fill paper-lined muffin cups three-quarters full with batter. Bake at 400°F for 20 minutes, or until muffins are done. Yields 20 muffins.
